The most organic lab I know of is Kay Chandler's Texas Plant and Soil Lab,
Rt7, Box 213 Y, Edinberg, Texas 78539, at US 512-383-0739.  Kay is on the US
National Organic Standards Board and does a fine job on requests for an
organic interpretation.

You could also look at Neil Kinsey's lab 314-683-3880.
