and propane accessories around side of building. no smoke in sight.

is lean and exactly right moistness. but tastes like gas. no mistake.

thinking day is gonna be disappointing if jimmy's is 'it', even

it's ok.

minced 'inside brown'. flavorless shoulders. kpm says chinese food.

agree. put it over rice. the could call this place sloppy joes.
the communards succumed to sentimental barbarism. they let the
cathedrals stand, but executed the cardinal, preferring architecture
over humanity. the cathedrals were already built in their minds.
the
situationists, rather than destroy the auto factory, over-turned

and locked the factory super in his office, valuing work, councilism,

john wayne. meet eric's relations. nice folks. que is average for
lexington. almost smokey. overchopped (but hand chopped). drowned
in
peppery dip. best iced tea all day. tour kitchen and see electric
rotiserrie into which hickory chips are added. shoulders were falling
off the bone. eric's aunt advises us that many places in town are
running gas/hickory hybrid and that bbq center is the only all hickory
place in town. i started to get full on crinkle cut fries there.

bbq center. smokey. soggy. curb service here. but go in for the fifties
overstuffed orange vinyl booths. toured kitchen. one through-port
fire
box. a pit in which the shoulders are 'foiled' down with heavy stainless
and cardboard boxes catch the fly-ash. i bought a hat there embroidered
with a lip licking piggy holding forks, wearing a napkin around
his
neck, and touting the slogan 'go hog wild'. i see an aerial photo
of the
bbq festival and am glad i didn't go.
i don't care if he's calmed down or has a t1 in his living room,
he's
still a nazi to me.
lex #1. best all day. very smokey. soggy. three fire boxes and six
pits
line the back porch. wayne monk is quoted in bob garner's book that
lex
#1 will be going to gas soon. i liked it well enough to order a
second
tray with eric.
not one of these places was even as good as stamey's across from
the
coliseum in g-boro.
this trip solidifies for me why i'd -much- rather go east. 1) soggy.
i
can't even taste the pork for all the vinegar with which this stuff
comes already served. great que needs no sauce. let the pig speak
for
itself. 2) shoulders. ok, they're a lean and tender cut of meat.
but
they have no -soul-. gimme some sweet white loin. gimme some cracklin.
gimme some funk! i want whole hog. 3) overchopping to the point
of
mincing. dries out the meat and makes stew out of the juices. 4).
oversmoking. all the smokey meat in lexington tasted -burnt-. i
talked
to three pitmasters. not a one left the pig in the pit for more
than
nine hours. this means -hot- cools. cooking too fast. with under-reduced
coals. which give off acrid white smoke, instead of the nearly
transparent to light blue smoke of well burnt coals that provide
long
cooking control. twelve to fourteen hours is good. 5) we didn't
see a
non-white person in lexington all day. lexington que started as
a
business to feed the lawyers coming to davidson county courthouse
during
circuit week.
jimmy's: 2.5 pigs (good if you don't mind gas taste)
smokey joes: 2.2 pigs (avoid this place)
john wayne: 2.5 pigs (very representative lexington que)
bbq center: 2.6 pigs (more smokey, less soggy than john wayne)
lex #1: 2.7 pigs (more smokey, less soggy than bbq center, but still
very soggy)
with only a couple of sentences, kpm convinces me he's on the level.
i
sure hope he builds that pit.
but next time, we go east.
even without the bbq orgasm, i had a great time, thanks to a carload
of
wonderful people. you peeps are, uh, -troopers- to put up with being
packed in like sardines for three and a half hours like that.
