Sorry for the delay in responding.  Todd Williams of the Jourdan Bachman
Pioneer Farm in Austin, Texas may be a useful contact for you.  As part of
their historical interpretation of the 1880's, they grow heirloom sorghum
varieties and get the public involved in the sorghum syrup making process.
