Urtica dioica - Stinging nettle. Young leaves make a very palatable and
nutritious potherb. They are also pureed, creamed, used in soups, made
into a beer, or mixed with leeks, broccoli, and rice to form nettle
pudding. The juice of the leaves, or a decoction of the herb, is used as
a rennet in preparing cheeses or junkets. Nettles may be blanched and
eaten like seakale. Dried leaves are brewed into an herbal tea. Eurasia,
naturalized in North America. A2, C11, C43M, C85M, F24, F80, G68, H46,
