Commercial Sprout Production

A local grower has requested information on commercial sprout
information. He is especially interested in unusual sprout material,
appropriate for the restaurant industry (i.e. other than mung bean and
alfalfa).
I would be interested in any references or specific information of
management practices for commercial sprout information.
