Regarding nutritional content of organicaly grown v. conventionally
grown plants, and particularly hybrids v. older cultivars, some very
interesting research has been done by Alan Kapuler and Sarangamat
Gurusiddiah over the past decade.
Their work is premised on the twenty protein amino acids as primary
human food. Their analyses include testing various crops under
differing conditions for their free amino acid content, using liguid
chromatography.
Organically grown foods and older cultivars demonstrate remarkable
difference from hybrids and conventional food when considered for
their free amino acid contents. Kapuler and Gurusiddiah's work not
only challenges our current food production system, but also
challenges our entire paradigm of nutritional analysis.
