Look for "The Book of Kudzu" by William Shurtleff and Akiko Aoyagi (Autumn
Press, Brookline MA, 1977) Seems that in Japan, kudzu is used for lots of
stuff, especially the root. It's alleged that the root will grow to man
sized. Shurtleff wrote a number of books on other Japanese/Chinese goodies
like tofu, miso, tempeh, etc.
