Long Branch Environmental Education Center in Leicester, NC (north of
Asheville) is on a beautiful site in the Newfound Mountains, with
permaculture, aquaculture, orchards, and edible landscaping on part of
large forested land trust.  The P.O. Box in Leicester, if I remember
correctly, is 369, or you could call information for the telephone number. 
It's run by Paul Gallimore, he can probably put you in contact with other
sites as well.  Ask to make sure the gardens are in use this year -- the
summer I was there they were on hold while we built a micro hydropower
system for the center.
