This volume explores all facets of how the nutritional value of
food is affected by the way it was produced. The agriculture-
nutrition connection is interpreted broadly, covering not just
biological and chemical aspects of nutrition and food quality,
but also consumers' perceptions, marketing channels, and economic
considerations. The concept of "nutritional value" is examined as
part of the more general concept of "food quality." Several
papers discussion the implications for national and international
food and nutrition strategies.

The 21 papers are from an international conference held in
Boston, Massachusetts (USA) in March 1997, organized by the Tufts
University School of Nutrition Science and Policy.
