Organic Origins?!

Hi all,
I am new to this so bear with me and forgive any mistakes in my internet
manners.
I am a freshman at Penn State University, and what I am doing is an
investigation into the environmental responsibility of my school.
Basically, I've learned that (once certain specifications are met) the
University buys it foods by choosing the lowest bid.
I want to see how feasible it is for the university to "go green". An
wholly organic supply of foodstuffs would be ideal, but I want to determine
how close we could get to this taking into consideration the economics and
shear demand of this 40,000 student university. (I will shortly have
figures of exactly how much is consumed).
